Fresh vs Frozen Boba Pearls

Frozen raw pearls cook straight from the freezer and often beat stale dry pearls. When to use fresh, dry or frozen boba, with cook times.

Frozen raw pearls go straight into boiling water with 1–2 minutes added to the cook time and often beat an old bag of dry pearls. Never freeze cooked pearls — they thaw grainy. Fresh (refrigerated raw) pearls cook fastest and taste best, but only keep a few days.

Why frozen works so well

Freezing raw pearls locks the starch before it has been gelatinised, so nothing is damaged. Cooking from frozen also stops the outside overcooking while the centre thaws — which is exactly what happens if you defrost them first. Dust homemade pearls in tapioca starch and freeze them spread out on a tray so they do not fuse.

Why you should never freeze cooked pearls

Cooked tapioca is a water-filled starch gel. Ice crystals rupture that structure, and on thawing the pearls turn grainy on the outside and hollow in the middle. No reheating method recovers it. If you have leftover cooked pearls, hold them in syrup and use them within 24 hours instead.

Ageing dry pearls

An open bag of dry pearls absorbs moisture and cooks unevenly, giving hard white centres however long you boil. If you are getting chalky cores from a bag that has been open for months, that is why — not your cooking. Decant into an airtight jar and use within about three months.
